We learned how to make Miso soup, different side dishes and how to prepare Kobe beef. Taro and Yoshiko prepared a handout for us with all the information about each dish.
Japanese cooking makes use of soy sauce, vinegar, mirin, sake and dashi. It is great to learn how to use ingredients that are foreign to me and that I have never used before. Sesame oil and soy sauce in particular, is something that I cook with more often after living in Asia for 3 years.
Miso is fermented soy beans in the form of a paste.
Miso soup is made from 'dashi', a soup stock made from seaweed and water.
Different kinds of seaweed is like lettuce and cabbage. They are not the same.
Root vegetables (burdock, lotus, carrot) are often prepared as a side dish in Asian cooking.
