This is not the prettiest quiche you have ever seen.  But it tastes great - and isn't that what is important? Maybe that is just me making excuses for taking a mediocre picture! Seriously though, this quiche tastes great..

Don't let the home made crust scare you off!  It is not difficult to make and it contains cheese.  Need I say more?

prego rolls

If you have lower quality meat and are unsure what to cook,  try these prego rolls.  Make sure to cut them into bite size pieces.  This makes cooking easier.  It will also make eating the prego roll easier.  This is a recipe that have been adapted from various prego roll recipes.  We enjoyed ours with home made bread but of course you can use store bought if you don't have time to bake.

tomato and feta Focaccia  - fit for a king

"Absence makes the heart grow fonder."  That is how the saying goes.  When my husband had to go away for 10 days last month I realized that his absence not only makes my heart grow fonder but also makes my cooking taste less delicious.  I came to the cheesy conclusion that he is the secret ingredient in my cooking!  I ate crackers and tuna for dinner almost every night; nothing against tuna or crackers..  but I did make lasagne when my sister came to visit that one night and who chooses crackers over lasagne?!  So, I came to my second conclusion:  Although good food can taste great when eating alone, it almost always tastes better when enjoying it with other people.

So,  when Louis came home and gave me a cookbook,  I decided on the Focaccia as the first recipe to try out; since it is something that I have never made before.  This recipe exceeded my expectations in every way and I have made it twice since - no left overs!

filled pancakes

Let me mention this in order to prevent a pancake squabble.  When I say pancakes, I am talking about thin, flat circles resulting from pouring a certain amount of batter into a pan.  Others may call them 
crêpes.  I am from a country where they are called pancakes and usually made on a rainy day.  The unadorned way to eat them is rolled up with cinnamon sugar sprinkled on the inside.  But this is by no means the only way.  Let's explore the world of filled pancakes!
